For the first time in SYSU International’s history, its Culinary Team took part in the 13th Philippine Culinary Cup held in conjunction with the World Food Expo last August 2-5, 2023.
The SYSU Culinary Team took part in the following categories: Chef Niño Salinas for French Touch Pastry category; and Chef Richard “Bogs” Condeño for French Touch Seafood and Pasta categories. All three categories were timed live cooking categories.
First up was the French Touch Pastry Category. With a time limit of one hour, Chef Niño was able to cook and present his entry, which was Coco Passion Guava Entremet.
The next two categories were Chef Richard's. For the Pasta Category, he prepared a Duck Ragu lasagna dish. The time limit to cook and present this dish was only 30 minutes.
For the French Touch Seafood Category, his entry was Tiger Prawn and White Snapper Roulade with Saffron Beurre Blanc, Honey Glazed Vegetables, and Potato Nest. All that was done within 45 minutes.
It was a very great learning experience for the team and they are all fired up to join next year's competition. They were coached by Chef Avery Manaloto and Chef Kate Sangalang, and assisted by Dennis Elumba. Congratulations to the team for a job well done!
